Massive endpoint documentation update

Just a small update here. We've been very busy indeed, with the new bookkeeping act. This did not affect our API very much, so we havn't been doing a lot of new stuff here the past year. However, we will be announcing some more new functionality in 2024, including a very requested feature. More on this later.

For now, we've updated our entire endpoint documentation, to feature much more elaborate descriptions of each endpoint and it's functionality. Hopefully making it a lot easier to work with.
